vegan soboro don (Japanese vegan minced meat) recipe


Soboro don (minced meat on rice) is a very common Japanese lunch menu. I used to take it to work in my obento box in Japan. I used tofu to make a vegan mince for this recipe. It is tofu but it definitely does not taste boring or watery! My husband and our son LOVED it! My son even asked me, "is this chicken mum?"

ingredients - serve 2-3
*300g firm tofu - mashed
*1 tsp ginger - grated
*1 tbsp SAORI Tsuyu (Seaweed & Soya Japanese Sauce)
*2 tbsp SAORI Goma (Sesame & Soya Japanese Sauce)
*1 tbsp sesame oil
*1 cup sushi rice - cooked
*1 green capsicum - sliced
*1 tbsp olive oil
* salt and pepper to taste

1:stir-fry ginger in sesame oil until the flavour comes out then add tofu. Continue to cook for 8-10 minutes (cook until the the tofu isn't watery)


2:flavour with SAORI Tsuyu and SAORI Goma sauce and cook another 2-3 minutes
3:to make the side dish, cook capsicum in olive oil for 2-3 minutes. Add salt and pepper to taste
4:serve tofu mince and capsicum on rice
