Prawn, Spinach and Egg Stir-fry

Autumn is the perfect season for cooking. Everything tastes good. There are lots of in-season fruits and vegies to be enjoyed. Our bodies need more food in autumn...so get stuck into healthy Japanese food.

Ingredients - (Serve 4)
* 16 peeled prawns
* 4-5 Eggs
* 1bunch of spinach
* 1 tbs olive oil
* 1 tbs grated ginger
* 50ml Soba Noodle Sauce
* 1tsp brown sugar
* salt and pepper to taste

1: make egg mixture: combine eggs, brown sugar, soba noodle sauce in a bowl and mix well.
2: stir-fry prawns, spinach and ginger in olive oil
3: when the prawns are cooked, put the egg mixture into the frying pan and stir-fry for approx. 2 mins
4: enjoy your homemade Japanese meal
